Pinot Noir Classese is a Cantina Monterucco Brut DOCG Classic method sparkling wine, made from 85% Pinot Noir and 15% Chardonnay grapes grown in the vineyards of the Municipality of Cigognola, province of Pavia. After the harvest at the end of August/beginning of September, the wine is vinified in white with soft pressing and separation of the must. It is then slowly fermented at a temperature between 16 and 18°C, which is the same. As for the aging, it is done a refermentation in bottle and after 48 months on the lees is disgorged and liqueur d'expedition is added.
Characteristics of this Classic Method Sparkling Wine
On the organoleptic examination this Classic Method Sparkling Wine has a straw yellow color with white foam and fine perlage. The nose is intense with sweet notes of dried fruit and bread crust. The mouthfeel is persistent with hints of bread crust, dried fruit and banana.
