Highly sought after among Sicilian wines varieties from an island of deep traditions, Moscato di Noto is produced from vines with ancient origins. It is thought that the vine already grew spontaneously in these areas or was probably introduced by the Phoenicians. The actual viticulture, however, is certainly the work of the Greeks who introduced in the region a wide range of varieties of vines still cultivated today. During the time of the Roman Empire the island’s productions were already famous and widely exported, held back centuries only by the arrival of the Arab domination. The development resumed around the end of 1200 with the arrival of the Aragonese first and then of the Bourbons, with oenological productions of high alcohol content mainly used as blended wines.
Moscato di Noto produced today is certainly a particularly renowned evolution among the white wines able to satisfy the most demanding palates, native to a region with a Mediterranean climate where the average temperature is 21 degrees C.
The vineyards for the production of Moscato wines of Noto are mainly cultivated on very calcareous, clayey soils, with an abundant and small skeleton, typical of the southern area of Sicily. The variety of vine selected for production is only Muscat, vinified in purity and cultivated with a Guyot breeding system capable of reaching a density per hectare of 4500 plants. Area of origin of the best Moscato wines of Sicily, the area around the town of Siracusa where the variety of Noto is produced is a forge of flavors, rich in wisely cultivated lands. The altitude of the municipalities of Rosolino, Pachino, Avola and Noto, usually does not exceed 40 meters above sea level, offering these vines the right sun exposure and temperature range suitable for a perfect maturation and the right level of sugar.
The harvest is mainly carried out between 21 August and 15 September, followed by a de-pressing and then a soft pressing. The static decanting of the must at a controlled temperature of 15 eggs in steel tanks process that exploits the spontaneous deposit on the bottom of the coarse particulate is followed by a further period of aging always inside stainless steel tanks, capable of maintaining the organoleptic characteristics of the product. Bottling is carried out in February and made available for sale after a further period of aging in glass.
Considered primarily an opening product, Moscato di Noto is particularly suitable to be served in smooth crystal glasses and does not require decanting. The very clear golden yellow color with green reflections is accompanied by organoleptic characteristics of a savory and fresh taste, perfectly balanced and with aromas of rose petals, pink grapefruit and almonds.
To be appreciated young, served at a temperature of about 15 C moscato di Noto wine in the refined variety produced by the cantina Elorina, one of the most renowned producers of the southern tip of Sicily, does not need decanting and offers an alcohol content of 13.5% Vol.
For its aromaticity the product is enhanced served with seafood, herring or salads, but can make the best accompanied by shrimp, crustaceans and sea urchins.
