A prestigious winery of Piedmont. La Scolca produces with its Cortese grapes important sparkling wines. This one is proposed in two versions: Pas Dosé, with a minimal quantity of sugar, and Brut, softer, thanks to the presence of a light “dosage”. This sparkling wine produced by La Scolca follows the traditional method, with a slow fermentation and the evolution of 24 months in the bottle. This process enhances the harmony between the freshness and the delicate hints that recalls bread, honey and spices. 100% Cortese grapes, suitable for the production of Gavi DOCG. They come from the hills near Rovereto, Gavi. The wine making technique requires the classic fermentation in the bottle followed by a maturation period of 24 months. It is suggested to drink this article within two years from the “dégorgement”.
