The peculiarity of Carmignano wine is given by the grapes that make it. First of all, San Giovese, a grape variety cultivated in much of Italy that is characterized by an aroma reminiscent of a bouquet of cherry flowers and fruit. In smaller percentages are found Canaiolo which is a local strain whose berries have a sweet taste, and the two varieties of Cabernet, Sauvignon and Franc, which recall aromas of woods, aromatic herbs and black currant. The harvest takes place at different times: Sangiovese and Canaiolo are harvested in mid - late September, Cabernet in the first half of October. The process involves a first alcoholic fermentation in steel tanks lasting 7 days, followed by maceration with the skins for two weeks and racking at a controlled temperature of 26 degrees.
The percentage of the different grapes that make the blends, together with the processing processes, give rise to different varieties of Carmignano that are distinguished by the peculiarity of aromas. In the DOCG for example, San Giovese is present for about 70/80%, while in the Reserve it makes up about half of the blend, which is completed by the presence of local varieties such as Canaiolo and international-cut grapes such as Cabernet Franc and Sauvignon.
