The Custoza Doc White Wine has its origin in the territory of Verona, where its production approaches that of renowned labels, from the classic Valpolicella and Amarone al Recioto and Bardolino Doc and DOCG. The exceptional white wine takes the name of Custoza from the hamlet of Sommacampagna: in local slang it means "ancient guard and guard station", a sort of lookout village from which the passages around the ancient "via Postumia" were controlled important Roman consular axis connecting West-East that crosses the entire Po Valley transversely.
The soil on which the vines are grown is predominantly morainic, with typical well-polished stone deposits, determined prehistorically by the flow of glaciers and melting rivers of which once the area was rich. From these terroirs with a mild and moderately rainy climate, the wine acquires its essential characteristics, from a slight aromatic to an excellent drinkability and freshness, while the particular selections made in the vineyards show good aging capacity over time.
Custoza does not rely on a predominant grape variety but on a traditional blend that enhances, alongside the native varieties of "Garganega", "Trebbianello" and "Bianca Fernanda", also other grapes grown in the area. This creates its typical and high aromatic complexity that makes it so appreciated among the italian white wines and distinguishes it from varietal wines. As for the production, specifically Trebbianello is used with a percentage ranging from 20 to 45%, the grapes of the Garganega grape variety are used in a slightly lower percentage, between 20 and 40%, Tocai Friulano is used instead for a minimum of 5% and a maximum of 30%.
Only hilly and Pede-hilly vineyards facing south and south-west and morainic territories of a predominantly calcareous, gravelly-sandy nature, with the exception of wet soils, are suitable for production, in addition, the maximum yield of the grapes must not exceed 150 quintals per hectare of specialised vineyard. The grapes allowed for vinification must ensure a minimum overall alcohol content of 9.5.
At the organoleptic analysis the Custoza has a characteristic straw yellow color, sometimes with green or golden reflections determined by the aging period: The larger the wine, the closer it is to the golden green colour range, while the younger wines express emerald green well.
Appreciated among the Venetian wines for its intense aromatic bouquet, the Custoza denotes a strong, delicately fruity aroma composed of crunchy white and yellow fruit, floral, with subtle hints of meadow herbs. On the palate the taste is savory and delicately soft, with the right body and pleasantly almond in the finish.
