Wine description

The renowned Apulian red by the Tormaresca wine house boasts the DOC Castel del Monte Red certification, confirming the guarantee of origin. The grape blend used for its production consists of 70% of Aglianico, 20% of Cabernet and 10% of Syrah. The selection is entirely belonging to the Bocca di Lupo estates in Minervino Murge, in the province of Bitonto. The vinification is realized once the picked grapes are slightly overripen, in order to enhance their phenolic potential. After the pressing, the fermentation takes place in truncated-conical fermenters of stainless steel, at a not higher temperature of  25-27°C. Maceration is handled with both follature and a well-balanced, gradual extraction lasting 15 days. After racking the wine is directly transferred in barriques of French and Hungarian oak where malolactic fermentation takes place, before being bottled. A 8 months period of refinement in bottle follows.

 

Characteristic of the Trentangeli Castel Del Monte DOC wine

The organoleptic exam presents an intense ruby red color. Its perfume is fruity with blackberry, prune and sour cherry scents followed by spicy notes of pepper, liquorice, vanilla and cocoa. The flavor is absolutely sapid, fresh and mineral with very light wood notes.

 

Recommended pairings while tasting this red wine

Tormaresca Trentangeli DOC red wine combines itself perfectly with white meat dishes and medium-aged cheese. At its best if poured at a temperature of 18°C, 20°C maximum, in tall and wide Ballon calyx glasses allowing its perfumed notes' fruition.
