Dievole winery produces a sensational Chianti DOCG, that is famous worldwide. It is a blend composed by 90% Sangiovese, 6% Canaiolo and 4% Colorino. The lands composed mainly by marls, limestone and stones. The vineyards have a south, south-west exposition and are trained with spur pruned cordon. 5500 plants per hectare, that are around 15 years old, give 60 quintals grapes. Chianti Classico is produced with spontaneous fermentation, started by local lees in containers made of concrete. The malolactic fermentation is followed by the aging, that is managed in non-toasted, big barrels made of French oak for 13 months. Other three months maturation in the bottle end the process. This fabulous and elegant product is a true ambassador of its territory.
