Valpolicella Classico Superiore DOC is a red wine from Azienda Agricola Vaona Odino. The grapes used for its production are: 40% Corvina, 30% Corvinone, 25% Rondinella, 5% Molinara, the grapes come from vineyards owned by the family Vaona, all vineyards with an average age of 25 ani. The Vinification includes a maceration of 4 - 5 days and 15 - 20 days of fermentation. Then goes into stainless steel tanks where it will remain for 12 months, at the end of this process the wine is aged in the bottle for 4 months.
Characteristics of this red wine
The wine has deep ruby. The aroma is intense with notes of red fruit, black currant and cherry. The palate is well balanced with a strong presence of tannins that make it fascinating and elegant.
Recommended pairings while tatsting this venetian wine
It can be perfectly paired with white and red meat and aged cheeses. It should be served in a wide glass at ambient temperature. We suggest to uncork the bottle 30-60 minutes before serving.
