The Talò line of the San Marzano winery expresses at its best the Salento characteristics. This wine has the IGP certification and it is made by 100% Negroamaro grapes. The density is 4500 trees per hectare and the production area is the San Marzano hamlet in the Salento. The soils are located at 100 meters above the sea level and they are clay not very deep with stones. The grape harvest takes place in the second half of September and there is a thermo-controlled maceration for 10 days followed by an alcoholic fermentation with selected yeasts. The refinement takes place in French oak barrels for 6 months. This wonderful wine keeps its organoleptic characteristics for 5 years.
Characteristics of the Negroamaro Salento Talò
It has a garnet color with purple reflections. The smell has black currant and berries aromas together with spices, vanilla and balsamic hints. The taste is bodied, velvety and harmonic with a long and sapid end.
Suggested pairings with this San Marzano wine
This wine is perfect with strong courses such as braised red meats or in humid and with medium aged cheeses. The service temperature is 18°C and it must be served in a Ballon wine glass. The proof is 13,5%.
