This Rosé by Giorgi is produced following the “Metodo Classico” (re-fermentation in the bottle). It has the denomination Oltrepò Pavese and it is produced with 100% Pinot Noir grapes. The vineyard gives 70 quintals per hectare and the harvest is between the end of August and the beginning of September. Soft pressing and elimination of stalks, then the must is left in contact with peels for 8 hours. The fermentation in steel container is set at a controlled temperature of 18°C. The maturation considers the foam formation in pressured steel containers and the aging on yeasts for at least 6 months. The must is then fermented in steel containers at a controlled temperature of 18°C. The foam formation happens in the next spring, in autoclave; here the wine rests on its yeasts for at least 6 months for a complete maturation.
