This sensational wine Bonarda DOC by Giorgi is cultivated in the area of Oltrepò Pavese. It is produced with 100% Croatina, whose vineyards give around 70 quintals per hectare. The harvest is planned on the second decade of September and it is managed manually. After soft pressing and elimination of stalks, fermentation and maceration are set in automated steel containers with continuous control of the temperature, set at 28°C. This process lasts at least 8-10 days. The complete malolactic fermentation is followed by the aging, developed in steel for 6 months at controlled temperature.
