This wine is a “Metodo Classico DOCG” (bottle fermented) and it is one of the most famous bottles of Giorgi winery. It is produced with 100% Pinot Noir grapes, cultivated in the areas of Montecalvo Versiggia, S. Maria della Versa and Rocca de’ Giorgi, located between 250-400 meters elevation on soils rich of clay and limestone, in Lombardy. The vineyard produces 60-70 quintals per hectare. After the harvest, usually planned between the end of August and the beginning of September, the grapes are submitted to a light soft pressing that extract only the free-run must. Then static clarification followed by fermentation, managed at a controlled temperature of 18°C in steel containers. In the next spring the wine is bottled with the “tirage” method. Considering the disgorging as starting point, the aging has to last at least 36 months, then the bottles rest other 6 months in the cellar.

Intense straw yellow colour with gold reflections and faint, persistent perlage. Its scent expresses a wide bouquet that recalls sage, mint, apricot and vanilla. The taste is dry, harmonious, rich and smooth, with a long and dynamic final.

Great with appetizers and fish, even with structured dishes. It has to be served at 8°C in a high, tapered wine glass.
