Produced by Giorgi in the areas of of Oltrepò Pavese, this wine recalls the old tradition and is characterized by naturality. The human being doesn’t need to follow step by step its production process. It is composed by 100% Pinot Noir grapes that are able to develop a sugar quantity of 10g/l. The vineyards give 80 quintals per hectare. The harvest is planned between the end of August and the beginning of September. The soft pressing includes the elimination of the stalks. The maceration in contact with the peels lasts then for 8 hours. The fermentation in steel at 18°C controlled temperature follows. The maturation and the foam creation in autoclave is planned for the next spring. Here the wine ages for at least 12 months on its yeasts. The absence of any filtration during the bottling, gives it a cloudy aspect that is the result of yeasts in suspension.
