A classic method sparkling wine from Sicily that expresses all the effervescence and potential of the Etna area. It boasts the D.O.C. Etna Spumante, and is produced with 100% Nerello Mascalese grapes. The origin of the vines lies in the territory of Castiglione di Sicilia near Catania, in the Cavanera Etnea estate. Harvest by hand towards the end of September. The vinification starts with the soft pressing of whole grapes and fermentation at a controlled temperature and refermentation in the bottle according to the "classic method". Finally, the refinement of the wine that develops in the bottle in contact with the yeasts for over 32 months with frequent "coupe de poignèe" to favor the olfactory complexity.

A pale straw yellow colour tending to bright gold. The scent is intense and fruity with delicate notes of Sicilian citrus, anise and mineral hints. The taste has a complex flavor, with a good structure and at the same time considerable elegance. Long sapid and mineral persistence with a nice blackcurrant and almond finish.
