The red noble wine Pinot Nero Monticol is one of the most important product of the Terlano Winery. The local Pinot noir vine from Trentino Alto Adige grows at 500-600 meters above the sea level. The falling airstreams refresh the temperature also in summer. The vine has been cultivated in Terlano since the half of 19th century. Especially the ancient vines give more elegant and structured wines. The Terlano wine is honored by the DOC Alto Adige certification and it is produced with 100% pinot nero. The grapes harvest is made manually and it follows the bunches racking off and the slow fermentation under temperature control with the delicate handling of the must in stainless steel tanks. Finally the malolactic fermentation and the aging which lasts 12 months. This takes place for the half in big wood tuns and the other part in barrels. For the barrel aging are used a third of new barrels. Before three months from the commercialization the wine is assembled and bottled. The production area is “Monticol” in Terlano which is the main production area of the company. The soils are located at 450-760 meters above the sea level. The exposition is South-west and the slopes have an inclination between 60% and 20%.
Characteristics of the Pinot Nero "Monticol" Doc
It has a very bright ruby red color almost garnet. It has some blackberry and other berries aromas but also a delicate hint of tobacco and flint joined by white grass mushrooms flavor. The taste is balanced with a remarkable mineral elegance with a complex and persistent aftertaste.
Suggested pairings with this Pinot Nero of Terlan
The Pinot Nero Monticol of the “Vigneti” line of Terlano is perfect with the roe deer back with apple and red wine purée and little gnocchi with ricotta, with the bull calf back with poppy, veil loin with herbs, potatoes purée, chestnut ragù, veil liver with butter and thyme, veil paillard with Mediterranean vegetables or fume deer with red blueberry and horseradish sauce. It has to be served at 18°C in a Borgogna wine glass.
