This is a classic wine of the Terlano Winery which valorize and remind the territory and its peculiar characteristics. It is produced with a local vine symbol of the territory of Trentino. Since always, the Pinot bianco has been one of the most important vine of the Terlano Winery. It is produced by using a single variety vinicfication and it has a refined taste with pleasant mineral hints. Also this wine has the DOC Alto Adige certification. There is a manual picking of the grapes and it follows a delicate pressing of the entire bunch and the racking off made by natural sedimentation. The slow fermentation takes place in stainless steel tanks under temperature control. Finally the aging period lasts 7 months on fine yeasts in steel barrels. The production area is Terlano. The soils are located at 250-400 meters above the sea level with a slope of 35% located at South-west.
Characteristics of the white wine Pinot Bianco Doc
It has a light straw yellow color with a light green hint. The scent has some pear, gooseberry and lime aromas all enveloped by chamomile and lemongrass hints. The taste is strong and charming with pear and quince aromas but also mineral and salty. It is a wine that dances on the tongue and it has a long persistence too.
Suggested pairings with the Pinot Bianco "Weissburgunder" of Terlano
It has to be served with fish starters. It is perfect with veil with tuna sauce or with tuna or salmon carpaccio. It is very good also with zucchini flower with burrata, avocado or with gnocchetti with spinach, pasta with carbonara, scallop, grilled red prawns, orata and grilled snapper. It has to be served at 10°-12°C.
