It is produced with grapes cultivated under the supervision of some professors of the University of Bordeaux. It ages in our cellar for two years in tonneaux made of French oak. It develops delicate aromas that create an important wine, smooth, with a wide bouquet and a taste with great persistence, spicy, fruity and enriched by cherry hints. This wine is produced with 100% Pinot Noir grapes coming from the vineyards located in the area of Gavi. The traditional red wine making technique requires a first aging in barriques and a further evolution in the bottle. It is suitable for long maturation periods if we preserve the bottle horizontally in a dark space without strong thermal excursions.
Features of “Pinot Noir” La Scolca
Shiny and intense garnet red colour. Its scent is fragrant, dynamic in its youth, characterized by rose and raspberry. It develops through the years spicy sensation and evolved perfumes. The taste is intense, rich, warm, characterized by almond hints.
Recommended food pairings while tasting this red wine La Scolca
Excellent with every type of meal, especially with pasta. It is great with cold cuts, roasted or braised game, cornmeal mush, “agnolotti with fonduta”, mushrooms and truffle. It has to be served at 20°C in a wide wine glass.
