The particularity of this "Crudo" sparkling wine, produced in the areas of of Oltrepò Pavese, is represented by its naturality. Produced without any filtration or clarification process, that makes it look a little bit cloudy, it maintains all its organoleptic features intact. The vineyards are cultivated on soils rich of limestone and clay, with 220-300 meters elevation. The south-east orientation gives the plants the possibility to be touched by the sun rays for the entire day. This wine is produced with 80% Pinot Noir and 20% Chardonnay. The harvest is managed manually and with a careful selection between the end of August and the beginning of September. Then the soft pressing is followed by fermentation in steel at controlled temperature. The aging lasts at least 12 months. During this period, the wine rests on its yeasts in autoclave, then it is bottled without filtration.

Cloudy straw yellow colour with a faint and persistent perlage. The perfume is rich and elegant, with hints of fresh fruit, bread, tangerine, apricot and vanilla. The taste is harmonious, excellent and can be suggested with all the dishes of the Italian kitchen.
