The Torre Zecchei estate produces this sensational White Sparkling wine in the Extra Brut typology. From an accurate study ended in 2010, it is produced the “Bonorivo” a white sparkling wine made without the addition of sulphites, and created for the most refined palates by respecting the nature and the consumer health. This wine is produced with only one vine variety which is exposed at east where it reaches the very morning lights and from this aspect it takes its name Bonorivo which means “early-rising” in the Veneto dialect. The recipe of this wine comes from generations and It has always been hidden. The second fermentation takes place at low temperatures in autoclaves with a resting time of three months on yeasts to keep the structure and stability. The wine is bottled in dark bottles to preserve the conservation. The white wine “Bonorivo” of the Torre Zacchei estate is an Extra Brut sparkling wine without additional sulphites and the production area is the DOC Valdobbiadene at Conegliano. The vine used is the Glera Prosecco used at 100%.
Characteristics of this sparkling Extra Brut wine
The Bonorivo of the Torre Zecchei estate has a charged straw yellow color and with the time it acquires some more intense and amber nuances. The perfume is wide and enveloping with remarkable white fruits and spring flowers aromas. Finally the taste is dry and charming.

The sparkling Bonorivo it has to be served with elegant fish dinners, with flavored white meats or it can be used also as meal-wine joined by sweet or salty snacks. It has to be served at 8°-10°C and it doesn’t need any settling time.
