From the vinification in blend of fine grapes of Corvina Veronese and Corvinone Veronese 70%, Rondinella 30%. The origin of the vineyards lies in Valpolicella, Veneto. Harvest by hand involves the selection of the best bunches at the end of September. Follows the vinification with soft pressing of dried grapes in January; maceration for about 30 days with temperature control. Racking of the still sweet wine with about 120-130 g/l of sugar. Cooling and cleaning of the wine (decanting) to avoid the continuation of alcoholic fermentation. Refinement involves maturation in stainless steel at a temperature below 10 ° C on its own yeasts for about 10 months. Evolution in the bottle for 3 months.
