This prestigious and famous blend is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% other grapes. The vineyards are located in the traditional area of Valpolicella, on the hills of Jago, where the elevation of the lands reaches 250 meters above the sea level. The harvest is planned between the end of September and the last decade of October and it is managed manually. The wine making considers a drying process that lasts 100/120 days. In December/January the stalks are eliminated and the pressing starts. The fermentation temperature is set on 12-23°C and the maceration lasts 35 days, 15 of them at cool temperature. The wine is poured into barriques at the end of May. After the malolactic fermentation, the wine ages both in oak and in the bottle. Natural stabilization.
