Produced with 100% Primitivo grapes, this Apulian red wine is born in the Montevella vineyard at Acquaviva delle Fonti, on soils of a certain depth and of a silty-clayey nature. The manual harvest takes place between the first and second week of September, followed by maceration for 4 weeks. This is followed by fermentation in stainless steel tanks for 4 weeks at a temperature of 25°C. The final refinement phase involves permanence in steel for 24 months with a subsequent year in the bottle.
Characteristics of this Apulian wine
Organoleptic examination shows a purplish red color with ruby reflections and an olfactory bouquet of red fruits such as blackberry and plum but also licorice, tea leaf and graphite. On the palate it is elegant and austere, with well-present but harmonious tannins.Along the finish.
Recommended pairings with this Apulian red wine
Excellent with meat and game dishes but also with great cheeses. Serve at a temperature of 18-20°C.
