Negramante from the Paololeo winery in Puglia is a red wine made exclusively from Negroamaro grapes, one of the most famous native varieties in Salento. The grapes come from the winery's vineyards in San Donaci near Brindisi and are harvested manually in the early hours of the morning. They are then destemmed and pressed, fermenting in steel tanks at a controlled temperature of 22-24°C for about ten days. After the first racking following clarification, malolactic fermentation takes place, followed by final ageing in French oak barriques for three months.
Characteristics of this Apulian wine
It has a ruby red colour with violet reflections. The bouquet revolves around red fruits and sweet spices. On the palate, the taste is decisive without being intrusive, with a pleasant finish of ripe red fruit.
Recommended pairings with this Apulian red wine
Excellent with structured first courses such as lasagne, baked pasta, pasta bakes, and slow-cooked red meat main courses. Serve at a temperature of 18°C in large glasses.
