This rosé wine from the Paololeo winery in Puglia is made exclusively from Primitivo grapes. Primitivo is a native grape variety that ripens earlier than other varieties: the grapes used to produce this Puglia wine come from the Manduria and Sava areas near Taranto. Once harvested manually during the last ten days of August, the grapes are crushed and cold macerated for about 5-6 hours. This is followed by pressing and fermentation at a controlled temperature of 15-16°C. The final stage of ageing takes place in steel for about 3 months.
Characteristics of this Apulian wine
It has a delicate cherry pink colour; the bouquet is reminiscent of flowers and ripe red fruits. On the palate, it is smooth and fresh with a pleasantly fruity finish.
Recommended pairings with this rosé wine
Try it with salmon croquettes, battered vegetables, mixed appetisers and fish dishes in general. Serve at a temperature of 10-12°C in a large glass.
