Amarone della Valpollicella is par excellence the very symbol of Veneto from the oenological point of view, also considered as one of the greatest Italian red wines. For this product of the Costa Arènte winery are used grapes Corvina, Corvinone and Rondinella and other vines in a lower percentage, carefully selected during the harvest: the grapes coming from the hilly vineyards at 600m of altitude grow on soils of clayey and calcareous nature, located in the Valpantena valley. After the manual harvesting of the grapes, the bunches rest for 3 months in fruity fruit losing a good part of their weight during the drying. At the beginning of December the wine is destemmed and pressed, with cold maceration and alcoholic fermentation for 2 weeks. It is then malolactic and aging in tonneaux for 2 years and one year in Slavonian oak barrels.
Characteristics of this Veneto wine
On organoleptic examination it has an intense ruby red color with olfactory notes that immediately recall cherry, black pepper and licorice. The palate is velvety and with the right acidity, the tannic texture is soft.

Particularly suitable with meat dishes, especially with game, also excellent with dishes based on mature cheeses. Serve at a temperature of 18-19°C in a large glass to favor oxygenation.
