Produced with grapes mainly Chardonnay and with other minor vines, this Salento white wine has its roots in the territory of Salice Salentino, near Lecce, where the grapes grow on soils of alluvial origin with a conspicuous presence of limestone areas. The manual harvest is followed by the de-stemming and soft pressing phases, with fermentation in steel at a controlled temperature. The refinement instead foresees a stay in cement tanks coated with food resins.
