This Salice Salentino Riserva from Cantina Paololeo is made from Negroamaro grapes and other minor native varieties from the rural area of Salice Salentino between Brindisi and Lecce. The grapes are harvested manually in the early hours of the morning, then destemmed and fermented in steel vats at a controlled temperature of 25°C for about ten days. This is followed by maceration on the skins and soft pressing of the pomace. The final stage of ageing requires 12 months in French oak barriques, 6 months in large oak barrels and a final 4 months in steel.
Characteristics of this Apulian wine
It has a ruby red colour with garnet reflections: the bouquet is reminiscent of ripe fruit and spices, while the palate is enveloping with a delicate tannic texture.
Recommended pairings with this Apulian red wine
Try it with particularly elaborate meat dishes: baked shank, slow-cooked stews, flambéed meats. Serve at a temperature of 18°C in large glasses.
