The name Lafóa recalls the beginning of the qualitative revolution in South Tyrol and the pioneering work carried out by Cantina Colterenzio in the 1980s. At the time, the pioneer Luis Raifer on the vineyard of the same name not only planted new vines, but at the same time introduced new quality standards. Vinification involves the use of Chardonnay grapes, from old espalier systems. The origin of the vines is that of Alto Adige: selected vineyards at an altitude of 400-550 m above sea level. Dry area, moraine, sandy, gravelly soils of medium structure; cool microclimate with strong daily temperature variations. Winemaking process involves the soft pressing of the whole bunch. Fermentation of the must in new and used barriques and partially malolactic fermentation in wood; a period of 10 months of aging on fine lees follows, accompanied by regular batonage. Aging in bottles for approx. 6 months.
