This Rosé sparkling wine is produced with the so called “Metodo Classico” in the territories of Langhe and Roero. It is composed by Nebbiolo grapes. The vineyards have a south, south-west exposition and are located 200 meters above the sea level. The soils here are mainly composed by sands and limestone. The plants, that 15 years old, are trained on espaliers with the traditional Guyot method. 4500 stumps per hectare produce 60 quintals per hectare. The wine making considers a first fermentation in steel containers at a controlled temperature. A brief period of contact with the skins gives as result the pink colour. The maturation is managed both in the bottle and in wood containers. The aging on lees lasts for 24 months and it is developed completely in the bottle.
