Pinot Noir is the prince of Oltrepò Pavese. Giorgi suggests a DOC version “in white”. 100% Pinot Noir variety cultivated in the traditional zone of Oltrepò Pavese, where the vineyards give at least 80 quintals per hectare. The production process considers the soft pressing and the 55% of free-run must is separated from the rest. The fermentation process is started by selected yeasts and it is managed in steel with a continuous control of the temperature.

The organoleptic analysis reveals a light straw yellow colour with green reflections. Its fresh perfume is delicate and fruity, with hints of apple and peach. The taste is elegant, harmonious, soft, structured and persistent.

This sparkling wine can be suggested with every type of meal or with appetizers. It is great with starters, rice, fish, crustaceans but especially with pizza. It has to be served at 8°C in a high, tapered wine glass that exalts its perlage.
