This fabulous Amarone is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% other grapes. The vineyards are located in the traditional area of Valpolicella, between 150 and 450 meters above the sea level. The harvest is planned in September and October and it is managed manually. The wine making considers a drying process that lasts till December/January. In February the stalks are eliminated and the pressing starts. The fermentation temperature is set on 13-23°C, while the maceration, that last 30 days, is managed for the first 12 days at cool temperature. Malolactic fermentation and aging in Slavonian oak barrels (50 hl) for 24 months. The maturation continues in the bottle. Natural stabilization.
Amarone della Valpolicella Classico DOCG BIO's features
Garnet red colour. Its perfume is wide and deep, recalling dried plums and cherries. The taste is structured but delicate.

Excellent with game, braised or grilled meat and aged cheese. It represents the perfect meditation wine. It has to be served at 18°C.
