This blend is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% other grapes. The vineyards are located in the traditional area of Valpolicella, between 150 and 450 meters above the sea level. The harvest is planned in September and October and it is managed manually. The wine making considers a drying process of the grapes till December/January. After the elimination of stalks, the grapes are pressed in February. The fermentation temperature is set on 13-23°C, while the maceration, that last 30 days, is managed for the first 12 days at cool temperature. Malolactic fermentation and aging both in barrels and in bottle.
