Enrico Serafino’s Alta Langa Pas Dosé Blanc de Noir Riserva DOCG is produced with 100% Pinot Noir grapes, harvested in the vineyards located in Mango, Loazzolo, Bubbio, in the province of Asti. This is the first Alta Langa Pas Dosé ever produced and for this reason it is the symbol sparkling wine that best represents the winery. After manual harvesting, the bunches are carefully selected and pressed in a nitrogen-free environment and without the use of augers to preserve the integrity of the grapes to the maximum. The must is fermented in stainless steel tanks at controlled temperature and remains on the lees for 6 months. We then follow the Classic Method with fermentation in bottle and aging on the lees for at least 72 months and late disgorgement.

On the organoleptic examination, this sparkling wine Metodo Classico shows a straw yellow color with golden reflections. The nose has sweet notes of apple, citrus, linden and bread crust. The mouthfeel is elegant and intense, with a long mineral aftertaste.
