The Gavi DOCG "Grifo del Quartaro" of Cantina Enrico Serafino was born in the vineyards of the municipality of Gavi, province of Alessandria. It is produced with 100% Cortese grapes grown in the vineyard on clay-loamy soils. After manual harvesting, the bunches are carefully selected and then cooled with carbonic snow to prevent oxidation. They are then subjected to soft pressing without the use of augers, to preserve the peculiarities of the bunch. The must thus obtained is cooled before fermentation in stainless steel tanks. It is then aged only in bottle for about 3 months before being released on the market.
Characteristics of the Gavi "Grifo del Quartaro" Docg
On the organoleptic examination, this Piedmontese wine shows a straw yellow color with greenish reflections. The nose has wild flowers, almonds, white and yellow fruits such as apple, pear, white plum and gooseberry. In the mouth it is a Fresh, dry, intense, pleasantly fruity wine, with a well balanced acidity and a pleasantly long aftertaste.
Serving suggestions with this white wine from Piedmont
It goes perfectly with appetizers, shellfish dishes and seafood. Also excellent as an aperitif and with sushi. Serve at a temperature of 10ºC in a glass not very wide.
