The Barbera d'Alba Superiore "San Defendente" DOC of Enrico Serafino Winery is produced with 100% Barbera grapes harvested by hand in the vineyards located in San Defendente, province of Cuneo. After the manual harvest, the bunches are cooled with carbonic snow to prevent oxidation; then soft pressing without the use of augers to preserve the characteristics of the bunch. Before fermentation, the must cools in stainless steel tanks and wooden vats.The must is cooled to preserve its best characteristics before fermentation in stainless steel tanks at controlled temperature. Followed by maceration with délestage and submerged cap technique for 18 months; The process of aging in wood lasts 18 months in medium-sized oak barrels.
