This Alta Langa Brut Rosé de Saignée DOCG "Oudeis" is produced with 100% Pinot Noir grapes; The name comes from the Greek Odysseus, "none": this to underline the fact that nobody is at the origin of its complexity except the Piedmontese terroir itself. The vineyards are located in Trezzo Tinella, Loazzolo, Vesime and Bubbio, between Asti and Cuneo at an average altitude of 450 meters above sea level, where the vines find an important supply of minerals. After harvesting by hand, the bunches are carefully selected and cooled by carbonic snow; after crushing, the must rests for 2-4 hours in a nitrogen-free environment and after a short maceration in order to extract the color (Saignée) the soft pressing takes place. The must then ferments in steel tanks at controlled temperature and remains for 6 months on the lees. Following the Classic Method, the fermentation takes place in bottle with subsequent aging on the lees for 36 months.
Characteristics of Alta Langa Brut Rosé Saignée DOCG Oudeis
When examined for its organoleptic qualities, this classic method rosé has a brilliant cherry pink color with copper nuances and a very fine perlage. The nose is intense with hints of red fruit and wild flowers. In the mouth is fruity, dry and with a pleasant mineral aftertaste.

It is a versatile sparkling wine, ideal for a fish menu. Try it with ham and salmon dishes. This wine should be served at a temperature of 8-10ºC in a tapered glass.
