The Alta Langa Brut DOCG "Oudeis" of the Enrico Serafino winery comes from the assemblage of Pinot Noir in prevalence and Chardonnay in lesser percentage. The vineyards located between Mango, Trezza Tinella, Loazzolo, San Giorgio S. and Bubbio, all between Asti and Cuneo, are placed between 300 and 550 meters above sea level, an optimal position to obtain products with elegance, minerality and power. After the manual harvest, the bunches are carefully selected and pressed without the use of augers, in order to preserve the qualities of the bunch itself. The must thus obtained then ferments in steel tanks and for 6 months rests on the lees with the batonnage procedure. According to the Classic method, the fermentation takes place in bottle with aging on the lees for 36 months.
Characteristics of Alta Langa Brut Docg Oudeis
When examining the organoleptic, this sparkling wine from Piedmont shows a straw yellow color with golden reflections, with a very fine perlage. On the nose there are aromas of broom, orange blossom with notes of citrus peel and delicate nuances reminiscent of pastry. In the mouth it has an important structure despite being straight and vertical.
Pairings with this Piedmontese Classic Method
It is a versatile sparkling wine, ideal for a fish menu. Try it with shrimp tempura on avocado cream. This wine should be served at a temperature of 8-10°C in a tapered glass.
