Produced with 100% white Malvasia grapes grown in the company vineyards of Leverano, near Lecce, this Apulian white wine with its name recalls one of the typical elements of Salento, that is the characteristic wind that blows on the vineyards leading to a perfect ripening of the bunches. The grapes harvested are subjected to de-stemming and soft pressing, with subsequent fermentation in steel at a controlled temperature and final phase of aging in cement coated with food resins.
Characteristics of this Apulian white wine
The organoleptic examination shows a pale straw yellow color and an olfactory bouquet that recalls white flowers and white pulp fruit. On the palate it has a slightly savory but pleasant vein.
