The Anthilia DOC Sicilia di Donnafugata is produced with the vinification of Catarratto grapes, mainly present in the grape variety, to which are added other indigenous varieties. The grapes are grown in hilly land that is affected and benefits the whole year by the influence of the salt that comes from the nearby sea of Taormina, just a few kilometers away. The vinification sees the soft pressing of the grapes and then the must ferments naturally at controlled temperature. The wine is put on the market after an aging in bottle of at least 2 months.
