The Zenta of Cantina Friulana Perusini is produced from a careful selection of the best bunches of Sauvignon and Chardonnay, vinified in two different phases. The Chardonnay grapes macerate for 4-5 days and are then placed in fermentation vats: In this initial phase, yeasts play a very important role as they protect the berries from the oxidation process and ensure that no chemical elements are used. The must is then subjected to the pressing phase during which the grape and juice are separated: at this point it is aged, half of the must in barriques and the remaining part in steel. The grapes of Sauvignon undergo the same procedure, except for the phase of maturation that in this case takes place entirely in steel. This wine owes its name to the battle of Zenta, the Serbian city that was the scene of the battle between the imperial army led by Prince Eugene of Savoy and the Ottoman army that came out defeated; at the head of the regiment there was just an ancestor of the Perusini Family, Once back from the battle he built the villa of Tapogliano, where today is located the cellar.
