The sparkling wine Cavaliere della Serra of the Massucco winery is produced with a blend of Arneis and Favorita grapes which are local vines of the Roero. The production area is Castagnito in the Roero and the vines are exposed at North-west at 350 meters above the sea level. The vines are cultivated in espalier and the pruning method is the French Guyot. The soil is clay and sandy. All the vines have an age between 35 and 40 years old and their annual profit is 100 quintals. There is a soft pressing, it follows a fermentation under temperature control with several batonnage in steel tanks. The second working process previews a re-fermentation in autoclave by following the Martinotti method (French Charmat).
Charactertistics of this sparkling wine
It has a straw yellow color with a fine and constant perlage. The fragrant and delicate yeast scent exalt the taste which is harmonic on the palate, fresh and pleasant. It is plenty of floral scents.
