Named after the Battle of Zenta in 1697 that definitively extinguished the expansionist aims of the Ottoman Empire over Europe, this wine is made from the best Merlot and Cabernet Sauvignon grapes for the same percentage. The individual plots are vinified separately and undergo a long maceration at a low temperature. To protect the cap from the action of bacteria, the grapes are continuously soaked with the must during maceration; once alcoholic maceration is complete, an initial decanting phase takes place to separate the solid part of the grapes from the yeasts that will be used for sur lies and malolactic refinement. The final stage of ageing requires a 16-month stay in barriques; the individual batches are then blended for a short time in steel.
Characteristics of this Friulian wine
