This Tuscany wine is produced by the Melini winery and it is named with the “Chianti Governo all’Uso Toscano” born by a slow re-fermentation of the wine with the withered grapes. This method was really ancient and this winery re-used it with some innovation. The result is an authentic and intense wine suitable with many courses. There are used the Sangiovese grosso grapes and some other local. The soils are cultivated with the cordon spur pruning and the Guyot method and the soils are rich of aberese and galestro. The grapes are picked and then they wither for three weeks to achieve an high degree of sugars. In the meal wine there are some other are racked off and there is added the withered ones to start again the fermentation. This ancient method permits to obtain a structured, rich, unique and pleasant wine.
Characteristics of the Chianti DOCG GOVERNO ALL’USO TOSCANO
It has an intense, vivid and deep ruby red color. The smell is enveloping, complex with ripen red fruits aromas of marasca cherry and raspberry with also floral aromas. The taste is full, bodied, soft and fruity but sapid and harmonic.

This wine is perfect with cold cuts, cheeses, vegetable soups, grilled red meats but also as appetizer. IT must be served at 20°C in a wide wine glass.
