This Grillo "Kados" from the Sicilian Winery Duca di Salaparuta is produced with the homonymous grapes in purity, grown in the vineyards located in western Sicily at the Risignolo Estate: here the soils are mainly of siliceous-clayey origin and are located at about 300 m above sea level; the vines therefore benefit from a climate with mild winters and dry springs/summers, but also with a strong temperature range. At the end of the harvest which takes place in the first 15 days of September, the must is obtained from the grapes which is then fermented in oak barrels for a duration of 40 days. The maturation takes place on the yeasts at a controlled temperature while the refinement takes place in the bottle for at least 3 months.
Characteristics of this Sicilian wine
Upon organoleptic examination this wine shows a brilliant straw yellow color; floral scents such as orange blossom and fruity aromas of white pulp fruits appear on the nose. In the mouth it is young and fresh with a nice juicy and savory note on the finish.

It is a very versatile wine; perfect with not very structured fish dishes. To be served at a temperature of 10-12°C in a not very large glass.
