The "Cubardi" comes from Primitivo grapes cultivated as a sapling in Nardò, in the province of Lecce. The grapes harvested all from own vineyards located in the territory of Nardò, are harvested by hand and gently stored in small boxes ventilated to preserve the integrity. In the cellar they are then further selected on a modern sorting table. It follows a fermentation in steel at controlled temperature, the aging is for 6 months in barrels of second passage; then, 8 months of further aging in bottle.
Characteristics of this Apulian wine
The wine has an intense ruby red color; in the mouth are initially released fruity aromas that result in spicy hints of tobacco and coffee with young and delicate tannins.
