Weinbeschreibung

The vinification of 100% pure Nebbiolo grapes. The production area, being a Barolo for municipal indication, is obtained from a selection of vineyards located within the territory of Serralunga d'Alba, part of the company and part of suppliers who traditionally donate their entire wine production to Fontanafredda. The vinification provides that the fermentation is traditional. Carried out in stainless steel vats with floating cap, with a duration of 15 days at controlled temperature (30-31°C) performing frequent pumping over, to optimize the extraction of polyphenolic substances. The aging of the wine provides for a long stay of at least 2 years in large oak barrels and barriques of Slavonia and Central France that precedes bottling, This phase is followed by a refinement that varies according to the characteristics of the vintage but is never less than 8-10 months.

 

Characteristics of this Barolo Docg

On the organoleptic examination this wine has a garnet red color with ruby reflections. The aroma is clear and intense, with hints of vanilla, spices, dried rose and undergrowth. The taste has a wide dry but soft taste, full, velvety and harmonious, long-lasting.

 

Serving suggestions tasting this red wine

This wine is ideal for pairing with red meat dishes, important, and medium or long-aged cheeses, but can also pleasantly accompany the conversation at the end of the meal. The optimal serving temperature is 16ºC in a high and wide glass that allows well to oxygenate the wine.
