A wine of Donnafugata with immense potential that boasts the denomination Etna Rosso DOC. The vinification involves the use of Nerello Mascalese grapes. The production area is that of Eastern Sicily on the northern side of Etna. The harvest involves the manual harvesting in crates with careful selection of grapes in the vineyard. The vinification follows after the selection of the bunches on the vibrating table and subsequent selection of the grapes thanks to a destemmer of the latest generation. Then the fermentation in steel with maceration on the skins for 8-10 days at a temperature of 25ºC. Aging for 14 months, partly in tanks and partly in French oak barriques at the second and third passage and then at least 7 months in bottle before being marketed.

The organoleptic examination shows a pale ruby red appearance. The scent of wine On the Etna Volcano, offers an elegant bouquet with notes of berries such as strawberry and red currant and floral hints; add delicate nuances of cinnamon and nutmeg. The taste is an expression of the excellent correspondence taste-olfactory with a good crispness and harmonious tannins. Long and balanced in the finish.

A perfect red wine with appetizers and mediterranean dishes based on eggplant or mushrooms, roasted or stewed meats. Try it also with North American dishes, such as chicken wings or hamburgers, or Asian ones as long as they are not too spicy: for example thai stir-fried beef (fried meat pieces in a pan), or dumplings (ravioli stuffed with meat or vegetables). The serving temperature is 16ºC in a wide glass that promotes oxygenation.
