The grape variety used for its production is 100% Nebbiolo. The vinification provides that the grapes arrived in the cellar is destemmed, pressed and started to fermentation at a temperature of 30-32ºC by carrying out numerous pumping to optimize the extraction of color and tannins. The maceration lasts 10-12 days. Malolactic fermentation takes place before the end of winter. The aging of the wine in the month of January following the harvest begins the phase of aging in barriques and in barrels of 20 and 30 hl of Allier oak. The stay in wood lasts about a year and, after a short period in stainless steel tanks, the wine goes in the bottle to complete the aging process.
Features of this Barbaresco Docg
The appearance of this wine is ruby red with garnet reflections. The nose scent of ripe plum, blueberries and violet blends in harmony with hints of licorice, cinnamon and tobacco. The rich taste of well structured tannins and the intense fruit give a dense, full and enveloping taste. Finish with notes of licorice and cinnamon.
