Wine description
The vinification of 100% pure Dolcetto grapes. The production area is that of Diano d'Alba. The vinification from the beginning of maceration takes place in stainless steel tanks at 30-32ºC with frequent pumping over to optimize the polyphenolic extraction. The fermentation continues until the sugar is exhausted at a controlled temperature of 25-26ºC. The aging of the wine starts at the end of the malolactic fermentation (end of November), the wine performs a period of aging in steel for 6 months. The wine is then bottled and further refined in bottle.
Characteristics of this red wine
The organoleptic analysis of the wine shows an aspect of intense ruby red color, with violet reflections. The nose aromas of blackberry and raspberry are combined with the clear hints of black cherry jam. The taste in the mouth full and enveloping tannins give sensations of volume and roundness. The acidity well balanced with fruity sensations gives persistence and flavor to the long aftertaste.

A wine that finds excellent pairing with hot appetizers, pasta dishes, vegetables and meat not too elaborate. The optimal serving temperature is 18ºC.
