This wine is part of Eleonora Martini's Elém project, the right combination of product quality and particular attention to the design of the bottle. The grapes used are pure Pinot Noir harvested by hand during the harvest; the clusters are subjected to a first cold skin maceration and then pressed. The result is a must that ferments in steel and then referments in the bottle with a rest on the lees for 30 months.
